I’m eating Olaf


The room went silent. Everyone was in a daze as we tasted the most wonderful dessert of our lives.


“It’s like eating a garden”

“It’s like eating a garden when it’s snowing”

“At the Northpole”

“Guys! I’m eating Olaf, in a good way.”

“I can’t believe I lived in a world where I didn’t know this existed.”

“It’s like only seeing in black and white and now I see color.”


Debbie is the most amazing chef. Some of the best food we have had here in Italy has been from her kitchen, here at the convent.


We asked her how she made this incredible shaved ice dessert.


“Water, sugar, fresh lemons, fresh herbs and stirred every 30 minutes in the freezer for 5 hours.”


“Guys! This ice was made with LOVE! Only love would go and stir it every 30 minutes for us.”


And we sure did feel loved.


The room was filled with so much laughter and joy.


Tonight was our first cooking class and 5 students worked with Debby to prepare a dinner of lemon pasta, chicken, homemade bread and vegetables.



The kitchen was a buzz as we moved from the table to the counter. Rolling out the dough and using a little muscle to combine the egg, flour and water. Some of us were on duty at the stove watching the chicken to brown and the fresh rosemary infused my nose as I stood above the pan.



I watched the students improve their skills as they rolled out the dough into thin strips of pasta. Some were better than others, but by the end we had a full table of homemade pasta.


I couldn’t help but think of my brother in law’s charge to me when I left America. He said, “You have to find a pasta guy!” Well, I found a pasta woman. And she makes dreams come true.
